Mommy Tips: Making Lunch Time Easier
Have you ever forgotten to pack the kids lunch boxes the night before and had to scramble in the morning to get it done? Even if your kids aren’t in school yet or they homeschool, lunch time can be just as stressful as dinner if you aren’t prepared. Having a plan for lunches and a routine can really help but sometimes you just need a quick, cheap and healthy way to get lunch together fast.
Since I have 3 kids who are in school, 2 who are homeschooled and 1 toddler, getting lunches figured out can be tricky. One simple thing I have learned to do to help when I need a quick solution is making a bunch of sandwiches ahead of time and freeze them (you know, kind of like Uncrustables only you can make them much cheaper and healthier).
I take a couple loaves of bread and spread peanut butter (or almond butter or sunflower butter) and jelly only in the center of a slice of bread. Then top it with another piece of bread. Then I use this genius little tool that cuts the bread into a circle and crimps the edges closed from The Pampered Chef. I repeat this process until the whole loaf (or loaves) are made into sandwiches.
You can place each sandwich in a baggie (making sure all of the air is out of it) and then place all of the baggies in a large freezer container or in a freezer bag. I like to use reusable containers for my kids lunches but I don’t usually have enough to put a bunch of these sandwiches in to freeze so I use baggies. Another option is to place the sandwiches all on a cookie sheet before you put them in baggies and put them in the freezer for about 20 minutes. Then place them all in the large freezer bag. This way you don’t have to use all of the individual baggies and the sandwiches shouldn’t stick together.
I know this idea will not solve all of your lunchtime worries but having this stock will help in times when you are rushed, tired, or out of creative lunch ideas. This doesn’t have to be just for school lunches either. Summer is coming and these are great to throw in a cooler to take with you on a trip or an outing.
